Elote (Grilled Mexican Street Corn)
🥘 Ingredients

Cotija or feta cheese (finely crumbled)1/2 c

ancho or guajillo chili powder1/2 tsp

cilantro (finely chopped)4 tbsp

corn (shucked)4 ears

garlic (finely minced)1 medium clove

lime (cut into wedges)1

mayonnaise4 tbsp

sour cream or Mexican crema4 tbsp

1Light 1 chimney full of charcoal.

2When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate.

3Alternatively, set half the burners of a gas grill to high heat.

4Set cooking grate in place, cover grill, and allow to preheat for 5 minutes.

5Clean and oil grilling grate.

6While coals heat, combine mayonnaise , sour cream or Mexican crema , Cotija or feta cheese (finely crumbled) , ancho or guajillo chili powder , garlic (finely minced) , and cilantro (finely chopped) in a large bowl.mayonnaise: 4 tbsp, sour cream or Mexican crema: 4 tbsp, Cotija or feta cheese (finely crumbled): 1/2 c, ancho or guajillo chili powder: 1/2 tsp, garlic (finely minced): 1 medium clove, cilantro (finely chopped): 4 tbsp

7Stir until homogeneous and set aside.

8When grill is hot, place corn (shucked) directly over hot side of grill.corn (shucked): 4 ears

9Cook, rotating occasionally, until cooked through and charred in spots on all sides, about ⏱️ 8 minutes .

10Transfer corn to bowl with cheese mixture.

11Use a large spoon to evenly coat corn on all sides with mixture.

12Sprinkle with extra cheese and chili powder.
